Taco Cabana, Inc., operates and franchises 123 restaurants that serve Mexican and Tex-Mex food in Texas, Oklahoma, and New Mexico. Started as a taco stand in 1978, the company pioneered the concept of "patio cafes," which are semi-enclosed patio dining areas decorated in festive Mexican themes.
